Vegetarian Bush's Three Can Enchiladas

Vegetarian & Vegan

Servings: 4 Extremely Large
Preparation Time: Half Hour

Recipe Ingredients

12 Corn Tortillas
1 16 oz can of Bush's Chili Beans
1 16 oz can of Bush's Vegetarian BBQ Beans
1 14 oz can of good stewed tomatoes
6 oz of grated cheddar cheese
1 small/ (or large if you like) onion
1/2 to a wholw green pepper

Recipe Directions

Warm Tortillas (see instructions on package)
Saute Vegetables
drain cans of beans
After veggies are sauted - add beans and cook through
when bean/veggie mixture is done spoon a large spoonful
in each tortilla
Roll tortillas and place in oven safe pan
save some bean/veggie mixture
When all torrtillas are rolled and placed put rmaining bean/veggie mixture
on the top.
Add tomatoes to top
Add Cheese to top
Microwave covered for 4/5 minutes
Put in regular oven and broil cheese till brown

Note: The consistency of this dish is more like a lasagna than a individual enchiladas

Nice additions
- use some tomato paste in the tomato sause
- use some of the sauce inside the tortillas
- serve with chips
